Is there a way to change the default velocity for writing midi notes rather than 100?
Yes, in the - surprise - “insert velocity field” in the Key editor.

And if you want that new value to be your default all the time, don’t forget to change it in your Template(s).
Im trying to find this setting also, to set it to default value of 90 , and also to temporarily change it in key editor. cant find either of these.
im in cubase 10.5.
